Delicious winter soups
Winter is perfect for delicious soups. They help us to warm up the cold winter days, are healthy, nourishing and great tummy filler. We are presenting you two homemade soups, we love. They fulfill all our culinary wishes. We hope you like the ginger-pumpkin soup as well as the beet soup as much as we do.
What do you need for the ginger-pumpkin soup?
Pumpkin seed oil
Pumpkin, pumpkin roasted seeds, ginger, coconut milk
Step 1: Skin the pumpkin, cut it into small pieces and cook it for 30 minutes.
Step 2: Meanwhile, skin and cut the ginger and it to the cooked pumpkin.
Step 3: Add 1/2 can of coconut milk to it and blend it.
Step 4: Refine with some grated nutmeg, butter, curry powder, lemon juice, pepper and vegetable broth. Blend it again. Done!
Step 5: Use some fresh basil, pumpkin seed oil and roasted pumpkin seeds like in my pictures shown for garnishing and that´s it. Bon appétit!
What do you need for the beet soup?
Lemon olive oil,
Beet, dill, lemon, horse radish, smoked salmon
Step 1: Skin the beet and cut it into small pieces. Cook it for 30 minutes.
Step 2: Add 1/8 cream to it as well as some horse radish, vegetable broth and lemon juice.
Step 3: Blend it. If necessary add some water to it.
Step 4: Roasted baguette and smoked salmon are perfect as side dish. Cut the baguette and fry it in lemon olive oil. Done!
Step 5: Use some dill, lemon slices and horse radish like in my pictures shown for garnishing and that´s it. Bon appétit!
